چکیده

The effect of partial autolysis during storage of shrimp biowaste on the quality of the extracted chitin and chitosan has been investigated. Shrimp waste materials were stored in a 30 o C incubator for 1-4 days. The quality of the chitin and chitosan extracted from these materials was assessed by ash and protein analysis and in solution by viscosimetry. Chitosan from fresh biowaste, treated for 1 day at 30 o C showed the highest viscosity 3590 cps. Chitosan from frozen material showed the highest viscosity at 3580 cps after 2 days at 30 o C. The corresponding values for chitosan without 30 o C treatment were 2300 and 2700 cps. Normally, viscosity, solubility and molecular weight of chitosan are closely related. The data of this study show that after partial autolysis the viscosity of the chitosan obtained has increased, but that other characteristics of chitosan such as degree of deacetylation, molecular weight, solubility and turbidity did not change.

Production of Chitin and Chitosan from Shrimp Shell in Batch Culture of Lactobacillus plantarum

Lactobacillus plantarum, as a potential lactic acid and protease producer, was used for biological extraction of chitin from shrimp shell. L. plantarum was grown in a batch culture containing shrimp shell powder and date syrup, incubated at 30 °C. The produced organic acids and proteases in L. plantarum culture were able to demineralize and deproteinize shrimp shell. Percentages of deproteiniza...

Background and purpose: Chitin is one of the main components of crustaceans’ exoskeleton. Chitosan is produced by deacetylation of chitin. Molecular weight and degree of deacetylation play important roles in biological activity of chitin, chitosan, and their derivatives. So far, various derivatives of chitin and chitosan are obtained. The purpose of this study was to prepare derivatives o...
